pH \u503c\u7684\u610f\u4e49\u3001\u6d4b\u8bd5 pH \u503c\u7684\u4e0d\u540c\u65b9\u6cd5\u3001\u98df\u54c1\u56fe\u8868\u4ee5\u53ca\u5728\u98df\u54c1\u52a0\u5de5\u548c\u4fdd\u5b58\u4e2d\u7684\u5e94\u7528\u3002<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u98df\u7269\u4e2d\u9178\u78b1\u5ea6\u7684\u610f\u4e49<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u7269\u8d28\u7684 pH \u503c\u8861\u91cf\u5176\u9178\u78b1\u6027\u3002\u5728\u98df\u54c1\u4e2d\uff0cpH \u503c\u662f\u4e00\u4e2a\u6307\u6807\uff0c\u51b3\u5b9a\u7740\u98df\u54c1\u52a0\u5de5\u7684\u5173\u952e\u73af\u8282\uff0c\u4e0b\u6587\u5c06\u91cd\u70b9\u4ecb\u7ecd\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u5fae\u751f\u7269\u751f\u957f\u4e0e\u98df\u54c1\u5b89\u5168<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u98df\u7269\u7684 pH \u503c\u4f1a\u5f71\u54cd\u5fae\u751f\u7269\uff08\u5305\u62ec\u81f4\u75c5\u7ec6\u83cc\uff09\u7684\u751f\u957f\u3002\u56e0\u6b64\uff0c\u964d\u4f4e pH \u503c\u53ef\u4ee5\u6291\u5236\u6c99\u95e8\u6c0f\u83cc\u3001\u674e\u65af\u7279\u83cc\u548c\u5927\u80a0\u6746\u83cc\u7b49\u75c5\u539f\u4f53\u7684\u751f\u957f\uff0c\u4ece\u800c\u63d0\u9ad8\u98df\u54c1\u5b89\u5168\u3002\u964d\u4f4e pH \u503c\u662f\u814c\u5236\u3001\u53d1\u9175\u548c\u88c5\u7f50\u7b49\u51e0\u79cd\u98df\u54c1\u4fdd\u5b58\u65b9\u6cd5\u7684\u5173\u952e\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u5316\u5b66\u53cd\u5e94\u4e0e\u98df\u54c1\u8d28\u91cf<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">pH \u503c\u5bf9\u98df\u7269\u7684\u53e6\u4e00\u79cd\u5f71\u54cd\u662f\u5b83\u5bf9\u9176\u53cd\u5e94\u7684\u5f71\u54cd\u3002\u4f8b\u5982\uff0c\u53c2\u4e0e\u6c34\u679c\u548c\u852c\u83dc\u8910\u53d8\u53cd\u5e94\u7684\u9176\u5728\u7279\u5b9a\u7684 pH \u503c\u8303\u56f4\u5185\u975e\u5e38\u6d3b\u8dc3\u3002\u56e0\u6b64\uff0c\u63a7\u5236 pH \u503c\u53ef\u4ee5\u9632\u6b62\u4e0d\u826f\u8910\u53d8\uff0c\u4fdd\u6301\u98df\u54c1\u7684\u8d28\u91cf\u548c\u5916\u89c2\u3002\u6b64\u5916\uff0c\u6c28\u57fa\u9178\u548c\u8fd8\u539f\u7cd6\u4e4b\u95f4\u53d1\u751f\u7684 Maillard \u53cd\u5e94\u4e5f\u4e0e pH \u503c\u6709\u5173\uff0c\u8be5\u53cd\u5e94\u662f\u70d8\u7119\u98df\u54c1\u548c\u70e4\u8089\u4e2d\u8910\u53d8\u548c\u98ce\u5473\u5f62\u6210\u7684\u539f\u56e0\u3002\u8fd9\u4e00\u8fc7\u7a0b\u7684\u6700\u4f73 pH \u503c\u4e3a\u5fae\u78b1\u6027\uff0c\u56e0\u6b64\u8c03\u6574 pH \u503c\u53ef\u4ee5\u589e\u5f3a\u98ce\u5473\u548c\u8272\u6cfd\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u98ce\u5473\u548c\u611f\u5b98\u7279\u6027<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u9178\u78b1\u5ea6\u76f4\u63a5\u5f71\u54cd\u98df\u7269\u7684\u5473\u9053\u3002\u9178\u6027\u98df\u7269\u7684\u5473\u9053\u504f\u9178\uff0c\u800c\u78b1\u6027\u98df\u7269\u7684\u5473\u9053\u504f\u82e6\u3002\u56e0\u6b64\uff0c\u5728\u8c03\u5473\u6c41\u3001\u8c03\u5473\u54c1\u548c\u996e\u6599\u7b49\u4ea7\u54c1\u4e2d\uff0c\u5e73\u8861 pH \u503c\u5bf9\u4e8e\u83b7\u5f97\u7279\u5b9a\u98ce\u5473\u81f3\u5173\u91cd\u8981\u3002\u6b64\u5916\uff0cpH \u503c\u8fd8\u4f1a\u5f71\u54cd\u98df\u54c1\u7684\u53e3\u611f\u3002\u4e00\u4e2a\u660e\u663e\u7684\u4f8b\u5b50\u662f\uff0cpH \u503c\u4f1a\u5f71\u54cd\u86cb\u767d\u8d28\u51dd\u56fa\u4ee5\u53ca\u5976\u916a\u548c\u9178\u5976\u7b49\u4e73\u5236\u54c1\u7684\u6700\u7ec8\u8d28\u5730\u3002\u53e6\u4e00\u4e2a\u4f8b\u5b50\u662f pH \u503c\u4f1a\u5f71\u54cd\u70d8\u7119\u98df\u54c1\u4e2d\u53d1\u9175\u5242\u7684\u4f5c\u7528\uff0c\u4ece\u800c\u51b3\u5b9a\u9762\u5305\u5c51\u7684\u7ed3\u6784\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u8425\u517b\u8d28\u91cf<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u67d0\u4e9b\u8425\u517b\u7d20\u7684\u7a33\u5b9a\u6027\u4e0e\u9178\u78b1\u5ea6\u6709\u5173\u3002\u4f8b\u5982\uff0c\u7ef4\u751f\u7d20 C \u5728\u9178\u6027\u73af\u5883\u4e2d\u66f4\u7a33\u5b9a\uff0c\u800c\u4e00\u4e9b B \u65cf\u7ef4\u751f\u7d20\u5219\u66f4\u559c\u6b22\u4e2d\u6027\u6216\u5fae\u78b1\u6027\u73af\u5883\u3002\u8fd9\u610f\u5473\u7740\u8c03\u6574 pH \u503c\u6709\u52a9\u4e8e\u4fdd\u6301\u67d0\u4e9b\u98df\u54c1\u7684\u8425\u517b\u8d28\u91cf\u3002\u53e6\u4e00\u4e2a\u5f71\u54cd\u56e0\u7d20\u662f\u8425\u517b\u7d20\u7684\u751f\u7269\u5229\u7528\u7387\u3002\u6d88\u5316\u9053\u548c\u98df\u7269\u57fa\u8d28\u7684 pH \u503c\u4f1a\u5f71\u54cd\u94c1\u548c\u9499\u7b49\u77ff\u7269\u8d28\u7684\u6eb6\u89e3\u548c\u5438\u6536\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u4fdd\u8d28\u671f\u548c\u50a8\u5b58<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u964d\u4f4e\u98df\u54c1\u7684 pH \u503c\u53ef\u4ee5\u6291\u5236\u67d0\u4e9b\u5fae\u751f\u7269\u7684\u751f\u957f\u548c\u9176\u7684\u6d3b\u6027\uff0c\u4ece\u800c\u9632\u6b62\u98df\u54c1\u53d8\u8d28\u3002\u8fd9\u5bf9\u4e8e\u6c34\u679c\u3001\u852c\u83dc\u548c\u4e73\u5236\u54c1\u7b49\u6613\u8150\u98df\u54c1\u6765\u8bf4\u975e\u5e38\u91cd\u8981\u3002\u6b64\u5916\uff0c\u98df\u54c1\u7684 pH \u503c\u8fd8\u80fd\u51b3\u5b9a\u5305\u88c5\u548c\u50a8\u5b58\u8981\u6c42\u3002\u4f8b\u5982\uff0c\u9178\u6027\u98df\u54c1\u9700\u8981\u66f4\u575a\u56fa\u7684\u5305\u88c5\uff0c\u4ee5\u9632\u6b62\u8150\u8680\u6216\u5316\u5b66\u53cd\u5e94\u5371\u53ca\u98df\u54c1\u5b89\u5168\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u76d1\u7ba1\u5408\u89c4<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u8bb8\u591a\u98df\u54c1\u90fd\u53d7\u76d1\u7ba1\u6807\u51c6\u7684\u5236\u7ea6\uff0c\u8fd9\u4e9b\u6807\u51c6\u89c4\u5b9a\u4e86\u53ef\u63a5\u53d7\u7684 pH \u503c\u8303\u56f4\uff0c\u4ee5\u786e\u4fdd\u5b89\u5168\u548c\u8d28\u91cf\u3002\u4f8b\u5982 <a href=\"https:\/\/www.fda.gov\/food\/guidance-documents-regulatory-information-topic-food-and-dietary-supplements\/acidified-low-acid-canned-foods-guidance-documents-regulatory-information\">\u7f8e\u56fd\u98df\u54c1\u548c\u836f\u7269\u7ba1\u7406\u5c40<\/a> \u5efa\u8bae\u4f4e\u9178\u7f50\u5934\u98df\u54c1\u7684 pH \u503c\u5e94\u5927\u4e8e 4.6\uff0c\u6c34\u6d3b\u6027\u5e94\u5927\u4e8e 0.85\u3002\u9178\u5316\u98df\u54c1\u7684 pH \u503c\u5e94\u5728 4.6 \u6216\u4ee5\u4e0b\uff0c\u6c34\u6d3b\u6027\u5e94\u5927\u4e8e 0.85\u3002\u6b64\u5916\uff0c\u7cbe\u786e\u6d4b\u91cf\u548c\u63a7\u5236 pH \u503c\u5bf9\u4e8e\u7b26\u5408\u6807\u7b7e\u8981\u6c42\u81f3\u5173\u91cd\u8981\uff0c\u5c24\u5176\u662f\u5bf9\u4e8e\u4f4e\u9178\u548c\u9178\u5316\u98df\u54c1\u3002<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u6d4b\u8bd5\u98df\u7269\u7684 pH \u503c<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u8981\u4e86\u89e3 pH \u503c\u5bf9\u98df\u54c1\u7684\u5f71\u54cd\uff0c\u5c31\u5fc5\u987b\u91c7\u7528\u5404\u79cd\u65b9\u6cd5\u6765\u68c0\u6d4b pH \u503c\u6c34\u5e73\u3002\u4e0d\u8fc7\uff0c\u98df\u54c1\u6837\u672c\u5e94\u5904\u4e8e\u80fd\u591f\u8fdb\u884c\u7cbe\u786e\u6d4b\u91cf\u7684\u72b6\u6001\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u98df\u54c1 pH \u5206\u6790\u4e2d\u7684\u6837\u54c1\u5236\u5907<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u6539\u5584 pH \u503c\u6d4b\u91cf\u7684\u98df\u54c1\u6837\u54c1\u5236\u5907\u6280\u672f\u5982\u4e0b\uff1a<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>\u6df7\u5408\u4e0e\u5747\u8d28 <\/strong>\u5927\u591a\u6570\u542b\u6709\u56fa\u4f53\u548c\u534a\u56fa\u4f53\u7684\u98df\u54c1\u6837\u672c\u90fd\u9700\u8981\u6df7\u5408\uff0c\u4ee5\u63d0\u9ad8 pH \u503c\u6d4b\u91cf\u7684\u51c6\u786e\u6027\u3002\u6df7\u5408\u540e\u7684\u6837\u54c1\u5e94\u5f62\u6210\u5747\u5300\u7684\u7cca\u72b6\u3002\u5982\u679c\u98df\u54c1\u7531\u56fa\u4f53\u548c\u6db2\u4f53\u7ec4\u6210\uff0c\u5219\u6837\u54c1\u7684\u56fa\u6db2\u6bd4\u5e94\u4ee3\u8868\u98df\u54c1\u3002\u6df7\u5408\u65f6\uff0c\u5982\u679c\u6837\u54c1\u4e0d\u80fd\u5f62\u6210\u5747\u5300\u7684\u7cca\u72b6\u7269\uff0c\u5219\u5e94\u6dfb\u52a0 <a href=\"https:\/\/site.extension.uga.edu\/foodscienceandtechnology\/understanding-ph-and-its-importance-in-food-safety\/\">10 \u81f3 20 \u6beb\u5347<\/a> \u6bcf 100 \u514b\u6837\u54c1\u7528\u84b8\u998f\u6c34\u6df7\u5408\u3002<\/li>\n\n\n\n<li><strong>\u69a8\u6c41\uff1a <\/strong>\u5bf9\u4e8e\u6c34\u679c\u548c\u852c\u83dc\uff0c\u5c06\u6837\u54c1\u69a8\u6c41\u53ef\u4e3a\u7cbe\u786e\u6d4b\u91cf pH \u503c\u63d0\u4f9b\u6db2\u4f53\u4ecb\u8d28\u3002<\/li>\n\n\n\n<li><strong>\u7a00\u91ca\uff1a <\/strong>\u67d0\u4e9b\u6d53\u7f29\u6216\u7c98\u7a20\u7684\u6837\u54c1\u53ef\u80fd\u9700\u8981\u4f7f\u7528\u7279\u5b9a\u4f53\u79ef\u7684\u84b8\u998f\u6c34\u8fdb\u884c\u7a00\u91ca\u3002\u4e00\u822c\u6765\u8bf4\uff0c\u52a0\u5165\u84b8\u998f\u6c34\u7684\u5efa\u8bae\u4e0e\u4e4b\u524d\u5f3a\u8c03\u7684\u76f8\u540c\u3002<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">\u6b64\u5916\uff0c\u5728\u6d4b\u91cf\u4e4b\u524d\uff0c\u5fc5\u987b\u8ba9\u6837\u54c1\u51b7\u5374\u5230 25\u2103\u5de6\u53f3\u3002\u8fd9\u662f\u56e0\u4e3a\u5728\u8f83\u9ad8\u6e29\u5ea6\u4e0b\uff0c\u79bb\u5b50\u89e3\u79bb\u589e\u52a0\uff0c\u5bfc\u81f4 pH \u503c\u4e0b\u964d\u3002\u56e0\u6b64\uff0c\u6d4b\u91cf\u70ed\u98df\u54c1\u7684 pH \u503c\u4f1a\u4f4e\u4e8e\u98df\u54c1\u7684\u5b9e\u9645\u5e73\u8861 pH \u503c\u3002<\/p>\n\n\n\n<h3 href=\"https:\/\/www.healthline.com\/nutrition\/acidic-foods#defining-acidity\">\u5b66\u4e1a<\/a> \u663e\u793a\u5728 7.39 \u65f6\u8fbe\u5230\u6700\u4f73\u72b6\u6001\u3002\u867d\u7136\u6211\u4eec\u5403\u7684\u98df\u7269\u4e0d\u592a\u53ef\u80fd\u6539\u53d8\u4eba\u4f53\u7684\u9178\u78b1\u5ea6\uff0c\u4f46\u4eba\u4eec\u666e\u904d\u8ba4\u4e3a\u5e94\u8be5\u4fdd\u6301\u6444\u5165\u91cf\u7684\u5e73\u8861\u3002\u56e0\u6b64\uff0cpH\u503c\u98df\u7269\u56fe\u8868\u5728\u8bb0\u5f55\u6211\u4eec\u98df\u7528\u7684\u5e38\u89c1\u98df\u7269\u65b9\u9762\u9887\u53d7\u6b22\u8fce\u3002<\/p>\n\n\n\n<figure
